What is a baker's table?

A baker's table is a heavy-duty worktable made to withstand the weight of regular kneading, mixing, and other food prep. Bakers tables generally have a 4-inch backsplash on the back and sides to help prevent ingredients from falling over the edge.

Why do bakers tables have wooden tops instead of Stainless?

Because stainless steel conducts temperature easily, doughs become stiff when they are chilled especially donut dough. For this reason, bakers prefer the insulation and warmth provided by a wooden table-top. Because dough doesn't come into contact with cold steel, it remains easy to work with; in some cases, dough can be proofed directly on the wooden table surface.
